Wordless Wednesday - Tex Mex Vegetarian Wraps

  1. This quick and easy tex mex wrap is done either with or without chicken. We did ours without chicken.

    4 cups cooked rice
    1 package taco seasoning mix
    1 small can kernel corn(drained)
    1 can black beans(drained and rinsed well)
    Salsa
    Shredded Cheese
    Tortilla wraps


    Cook whatever rice you choose. I had Uncle Bens so we used that. Once rice is cooked stir in the taco seasoning mix until well mixed. Add the kernel corn and black beans.

    Place mixture on wraps, top with salsa and cheese and roll up.

    Note: I preferred them without cheese but everyone else in my house liked them with the cheese. This is a very quick and easy meal to prepare.

  3. I'm sure I could adapt this to be gluten-free, but I wonder how they would taste with corn tortillas. Have you tried them with those?
