SlowCooker Easy Vegetable Soup

We hadn't thought about what to have for supper yesterday. Some times meal planning comes as an afterthought. So when my DH went home to let our Oliver out he put this into the slowcooker.

1 can 798 ml Tomatoes
1 small bag coleslaw mix(or use a small head of cabbage shredded and 2 carrots shredded)
2 cups frozen vegetables
1l tomato juice
1 can mushrooms
2 tsp fresh basil
1/2 tsp minced garlic
1 pkg. onion soup mix
seasoning salt to taste.

Select slow cooker for 6 - 8 hours and enjoy! We served ours with some ancient grain bread. A great low-fat and quick meal. You can adjust the spices to come up with a flavor that you enjoy. Use up whatever vegetables you have and get creative, you won't be disappointed.
